Golden Waffles with Laduma red syrup

  • 2 eggs
  • 125ml (½ cup) sunflower oil
  • 250ml (1 cup) milk
  • 180ml (¾ cup) buttermilk
  • 280g self-raising flour
  • 5ml (1 tsp) baking powder
  • 45ml (3 tbsp) sugar
  • 2,5ml (½ tsp) salt
  • 2,5ml (1/2 tsp) ground cinnamon
  • Pinch of ground nutmeg
  • Cranberries, berries and ice cream to top waffle

Syrup:

  • 200g strawberries or other soft berry
  • 50ml honey

For the waffles, firstly whisk your liquid ingredients together. Sift your dry ingredients into a separate bowl. Combine the two bowls and mix to make a smooth batter. Now crush the berries in a blender before adding and stirring in the honey to create the Laduma syrup.

Heat the waffle iron, grease it and pour your batter in. Bake until the waffles are golden and crisp (2 – 3 minutes). Serve the warm waffles with a generous scoop of ice cream, Laduma syrup and some cranberries over the top.
