Vegan Scones 

  • 450g self-raising flour
  • 70g caster sugar
  • Pinch of salt
  • 75g vegan butter
  • 240ml almond milk (or other dairy-free milk)
  1. Sift the flour, sugar and salt together, add the vegan butter, a teaspoon at a time, then use your fingers to rub into the flour.  Slowly add the almond milk to form a soft dough.
  2. Turn out onto a lightly floured surface and pat out gently - cut scones out by using a cookie cutter and transfer the scones onto a baking tray lined with parchment paper. 
  3. Glaze scones with a little almond milk before placing into a preheated oven of 200C  Bake for 12 – 15 minutes until risen and lightly golden – Cut in half and serve with some vegan butter and strawberry jam.
