Vegan Scones
- 450g self-raising flour
- 70g caster sugar
- Pinch of salt
- 75g vegan butter
- 240ml almond milk (or other dairy-free milk)
- Sift the flour, sugar and salt together, add the vegan butter, a teaspoon at a time, then use your fingers to rub into the flour. Slowly add the almond milk to form a soft dough.
- Turn out onto a lightly floured surface and pat out gently – cut scones out by using a cookie cutter and transfer the scones onto a baking tray lined with parchment paper.
- Glaze scones with a little almond milk before placing into a preheated oven of 200C Bake for 12 – 15 minutes until risen and lightly golden – Cut in half and serve with some vegan butter and strawberry jam.
